Studying the biological properties of local wheat varieties on the technological mode and its influence on tne production of flour

80% of the population of Uzbekistan uses fiour local warieties for national flatbreads in tandoors. In recent years, despite the fact that the yield of winter in the republic has increased from 14 to 55 ctntners of wheat per hectare, the population's demand for grain has not decreased, and the rate of decilne in the technological qualities of iocal wheat varieties is observed.
